How to Make Homemade Tortillas and Biscuits

  • 3 cups unbleached flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 4-6 Tbsp. vegetable shortening or lard
  • about 1 1/4 cups warm water

Mix dry ingredients in a large bowl. Add vegetable shortening or lard. Or use a combination of half lard, half shortening. Use a fork or a pastry cutter to cut in the shortening or just do it the old fashioned way and use your hands.

Next add warm water a little at a time until your dough is soft and not sticky. You do not need very hot water. Knead the dough for a few minutes. Now you will pull off pieces of dough to form about 12 small dough balls. Let them rest for at least 10 minutes, longer if you like.

Now is a good time to heat up the pan you will use to cook the tortillas. Turn the heat to medium to high setting. Now you can roll the dough out with a rolling pin. Dust each dough ball with flour before rolling out. Roll them out fairly thin. Roll one side, turn over and roll other side. Now you are ready to cook the tortilla. It doesn’t take long to brown in a pan. Cook for a few seconds on both sides and you have tortillas that you can eat now, refrigerate or freeze for later.

  • 2 cups flour
  • 1 teaspoon salt
  • 2 ½ teaspoons baking powder
  • ¾ cup milk
  • ¼ cup shortening

Mix all ingredients together and roll out onto a floured surface, to about 1/2 inch thickness. Use a round cutter or a glass dipped in flour to cut out biscuits. Place on a greased pan and bake at 450 degrees in the oven for about 12 to 15 minutes or until the top is brown.
