Chocolate Chip Bran Muffins

Makes: 12 muffins

Ingredients:
  • 2 cups bran cereal
  • 1/2 cup dark chocolate chips/chunks
  • 1 cup skim milk (I simply water down my milk)
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1 ¼ cups all purpose whole wheat flour
  • ¼ cup brown sugar
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
Directions: Preheat oven to 425 degrees. Prepare muffin tins with non-stick spray. Mix cereal, milk, oil, and egg in large mixing bowl. Allow to stand for at least five minutes. Combine remaining dry ingredients and add to cereal mixture. Stir until all ingredients are moistened. Fill muffin cups about 2/3 full. Bake for 15 to 20 minutes. Comments: The original recipe called for raisin bran cereal instead, but I don't like raisins so replaced it with normal bran cereal and dark chocolate chunks. I also added a bit of vanilla extract to give it more flavour. Hope you enjoy!
