Bacon Pasta Salad, Bacon Quesadilla and Other Favorite Bacon Recipes

We all love the smell of bacon frying in the pan, crisping for those ultimate few minutes.  Of course once it comes out, you just have to grab a piece right away.

But, just having plain ol' bacon may not be enough for everyone.  Many people wonder how to incorporate bacon into different recipes.  Well, never fear here are some great ways that you can use bacon to flavor up some of your favorite dishes.

Bacon pasta salad

You need:  1/4 pound of bacon, cut into small pieces then fried, elbow macaroni, black olives, scallions, sweet red peppers, italian dressing.

To do:  In a pan boil about 6 cups of water, bring to a boil then add in your pasta.  Prepare the pasta until is cooked well.  Drain the pasta then let cool for about an hour.  Chop up black olives, scallions, sweet red peppers.  In a big bowl, toss in pasta and veggies and bacon mix well.  Next using about a cup of italian dressing cover the pasta, toss, then place in the fridge to cool for a few hours.

This dish is great for pot luck dinners or a cool lunch time meal.

Bacon and cheese Quesadilla

You need: 3 to 4 cooked slices of bacon, your favorite type of cheese and two tortillas.

To do:  In a frying pan, spray a small amount of cooking spray, this is to keep food from sticking.  Turn on your heat to about medium high heat.  In the pan, place one tortilla, then a layer of cheese, bacon, more cheese then finally the last tortillas.  Cook on one side for about a minute, then flip over to cook the other tortilla.  You may want to separate the tortillas to see if the cheese is melted or not.

These make great accents to cups of tomato soup in the fall or winter.

Bacon Tomato salad

You need: grape tomatoes, 1/4 bacon fried and crumbled, mozzarella cheese cut into cubes,  extra virgin olive oil, balsamic vinegar, salt, pepper.

To do:  In a bowl place, grape tomatoes, mozzarella cubes, and crumbled bacon, mix around a bit.  Over the top of the mixture, place oil and vinegar.  You will want to use about 2 tablespoons of each, depending on how big your salad is, this is something you will want to play with.  Then sprinkle with salt and pepper.  Place in a fridge for about 30 minutes to chill.  This makes a great side dish for a grilled main course.

BLT with a twist

Love blts this is the sandwich for you.  Prepare the blt as usual, but instead use your favorite salad dressing, you will be amazed at the taste difference.

Bacon wrapped chicken

You need: chicken breasts, bacon, salt pepper, garlic.

To do:  Take a slice of bacon and wrap it around the chicken breast, sprinkle with spices.  Then either grill your chicken or place in the oven to be backed.  If you bake this dish, you will want to have your oven on 350, back until done.  Should take about 1 hour.

The sky is the limit when it comes to bacon.  Have fun coming up with other great dishes.
